Hotel Services Management Solutions in conjunction with TAFE SA, The IHHC, industry leaders and the Maggie Beer Foundation have supported the need for an aged care specific catering course. This qualification will not only provide chefs with the skills and knowledge required to work successfully in aged and healthcare catering services, but also enable them to enrich the lives of many vulnerable people through the provision of high quality food and the delivery of passionate client service. The qualification will also prepare chefs for work in other catering businesses and provide them with the opportunity to add to their previous cookery qualification; or assist them in working towards the achievement of a Certificate III in Commercial Cookery. There are a couple of options available; a full 12 month course that suits a person wanting to move into cookery; or a short course that focuses on the top three skills required to work in aged care. The latter suits an already qualified chef looking to upskill for a transition into aged care.
We need to start now to be able to build a strong knowledge, skill and passion base for the future needs of the aged care industry. By starting with education we are giving chefs or people looking to upskill the basics of what it actually means to be a chef in aged care, it’s not the same as being a line chef in a restaurant!
Some of the focuses of the course include, cultural specific menu planning, texture modified meal preparation (using current and innovative techniques) understanding food safety and standards. I still believe there is a need to professionalise the aged care catering service with in aged care, this is the one of the first steps on this important path. We need to be ready for the baby boomers and the increased diet related issues with the older generation. Catering Services should be a true value add to any aged care business, by putting your current staff through some education like aged care specific catering course you are on the way to using this important section of your business as a solid marketing tool.
